Weber State University’s Nontraditional Student Center is sponsoring a nutrition workshop on the Ogden and Davis campuses. The center is working with the Utah State University extension to teach a series of classes entitled Nutrition on a Mission.

“We try to come up with certain workshops that will benefit students,” said Cathy Barrow, the secretary for the Nontraditional Student Center. “And we decided to do something more on the healthy side.”

The classes will be held from Sept. 5 until Oct. 18. They will be taught on the Ogden campus in the Shepherd Union Building, Room 321, on Wednesdays from noon until 1 p.m. The Davis campus will also hold classes on Thursdays from 6-7 p.m.

Each class will include a cooking demonstration of various recipes, with samples of food being given after the classes. Lessons will focus on healthy eating, eating on a budget, how to make quick meals and ideas for snacks.

Students who enroll in the class will also be placed in a drawing to win a free cheese grater. At the end of the course, students will receive a certificate of completion from the workshop that can serve as a personal reminder of their accomplishment and the need to eat healthy at home. Students must attend every class in order to receive the certificate of completion.

The aim of the class is to help people learn to cook from scratch, eat healthy at home and save money while doing it. Normally, the workshops, which USU extension faculty teach, are taught to people within their own homes as part of the program’s aim to encourage people to cook in their own homes as opposed to going out to eat. However, the classes will be taught on WSU campuses for the fall semester in partnership with the Nontraditional Student Center.

“We teach in the Ogden area,” said Lisa Morby, the instructor for the workshops. “And students at Weber State University are our target audience of people we teach our program to.”

Morby is an Expanded Food and Nutrition Education Program nutrition education assistant working for the USU extension. The workshops are part of the EFNEP, which is sponsored by the United States Department of Agriculture. The program aims to assist audiences across the country in utilizing the resources available and changing behavior in order to facilitate healthy diets.

Thus far, 25-30 people have signed up for the classes, including the WSU women’s basketball team, which has been encouraged by its coach to eat healthier.
