Carne Guisada (stewed beef)

A delicious dinner idea for hungry students.


2 lbs. beef cut into chunks
3 Tbsp of oil
1 cinnamon stick or 1/4 tsp.
1 sprig of thyme or 1/2 tsp.
1/2 tsp. ground black pepper
3 ground cloves
3 bay leaves
4 garlic cloves
1 medium onion
8 roasted tomatoes
2 red bell
3 thickly sliced carrots
6 thickly sliced potatoes
salt to taste


Roast tomatoes, onion , garlic and chili pepper, then blend with cinnamon, cloves and thyme.

Cook meat chunks in oil with bay leaves. When golden brown add the sauce and when the meat is tender add the sliced potato and carrots. Let cook on medium heat with a lid so the sauce is not consumed. Allow potatoes and carrots to soften.

Can be served with white rice and warm tortillas. You can substitute rice for couscous.

Serves: 8 people.
